First, you need to prepare your porterhouse cuts in their marinade. In a big zip lock plastic bag, place your meat cuts in a substantial amount of Italian dressing and set aside for at least a couple of hours before grilling. This is to ensure that the meat cuts absorb the marinade and the flavors get locked in the meat. While waiting you can start preparing the coals that will cook the steaks. Once the two hours is up, shake the bag around so that all sides of the meat are covered with the Italian dressing.
